Strawberry Festival inspired recipes

The Annual Strawberry Festival, which was held on Wednesday, May 4 in the Academic Mall, is a tradition at Stony Brook, and it featured a special array of strawberry-inspired treats. It is held each year in conjunction with Diversity Day, when students and clubs share the many dimensions of their heritages.

It was a day filled with food, dancing and good times. If you attended, here are two recipes for post-festival delicious strawberry treats that are quick and simple to create.

Oreo Crunch Parfait

This parfait is a delightful weeknight treat in the middle of studying for finals.

Start to finish: 25 minutes

Servings: 4

2 cups fresh strawberries, sliced (about 16 strawberries total)

1/2 cup Cool Whip whipped topping, thawed

8 Oreo Cookies, coarsely crushed

In 4 8-ounce cups, layer half of each ingredient. Repeat till you reach the top of the cups.

In a refrigerator, leave the cups for 15 minutes. After that, enjoy them with a spoon.

Want to replace the Oreos? Add granola or another fruit, like a sliced banana.

Now how to celebrate after finals …

Strawberry Pineapple Mimosas

These mimosas are a perfect way to refresh and get your mind off of school (for the moment).

Start to finish: 5 minutes

Servings: 8

1 1/2 cups orange juice

1 1/2 cups pineapple juice

1 25.4-ounce bottle sparkling white wine (or champagne), chilled

1/2 cup strawberries, thinly sliced

In a pitcher, or even a big mason jar, mix the orange and pineapple juice together.

In 8 champagne flutes, pour the mixed juices until each flute is half full, and then fill the rest of each flute with white wine (or champagne).

Then take strawberry slices and fit them on the rim of each flute, or simply put 2 or 3 slices into each flute. You can squeeze the strawberry slices lightly to get juice out if you want to.

Serve immediately, or let chill in a refrigerator. Sip and enjoy.
